ダマスカス45層 ミラー この包丁は、異なる素材を組み合わせた構造で、45層のダマスカスと鏡面仕上げが特徴的です。 心材の刃には超硬ステンレス鋼材であるAUS10または10Aが使用され、バナジウムやモリブデンの添加により硬さや耐摩耗性が向上しています。ステンレスということもあり、錆びにくく、切れ味が持続するため、研ぎが少なくて済みます。 ハマグリ刃と呼ばれる刃の形状は食材が刃に張り付く事を軽減し、軽い力で食材に食い込むのに適しています。心材の刃が硬い鋼材で、両側が柔らかいステンレスで挟まれているため、探究性にも富んでおり、研ぐ際に硬い鋼材の面積が少なく、研ぎやすい特徴があります。

グランドシェフSP Type3 グランドシェフSP Type3は堺孝行が贈る洋包丁のプレミアム商品、Type1、Type2に続く第三段です。 ステンレス系の最高素材ポーラーウッデホルム特殊鋼を使用した高級ブレードにアクリル樹脂の柄を付けました。美しく、モダンでおしゃれな包丁に仕上がりました。アクリル樹脂はアクリルガラスと呼ばれるように、透明性に優れ、また屈折率も高いことからガラスの代用として利用されることもあります。また耐久性にも非常に優れ新しい素材として期待されています。アクリル樹脂は自由に着色も可能で、単色だけでなく墨流しのように複雑に混ざり合った模様が可能です。ただし、まったく同じものが作成できません。あらかじめその点ご了承下さい。   ポーラーウッデホルム特殊鋼（スウェーデン鋼）スウェーデンで産出される刃物用の高級鋼材の事です。日本で言えば島根県の安来鋼の様な鋼材。スウェーデン鋼と言っても数百に及ぶ種類があり、全て同じ材質ではありません。青木刃物では以前はスウェーデン鋼と言う表示をしていましたが、ボーラーウッデホルム特殊鋼として、他の鋼とは区別しています。グランドシェフシリーズで使用されている鋼はスウェーデンのウッデホルム社が製造しています。ポーラーウッデホルム特殊鋼のような良質の鉄鉱石はリンや硫黄などの不純物元素が少ないため、切れ味が鋭く、切れ味の持続性、耐摩耗性、耐食性に優れており、ステンレス系の包丁の材質としては最高位に位置しており、原料の価格も上昇の一途です。ステンレス系のポーラーウッデホルム特殊鋼は堺孝行刃物がほぼ一手に使用しており、他社ではほとんど取り扱いがありません。日本とスウェーデンとの合作で日本の包丁の評価を高めている要因でもあります。
