青二鋼 牛刀（両刃） 日本鋼の高級ランクにある青二鋼を使用したプロモデルの包丁です。カミソリのような切れ味と長切れするブレードが特徴です。 青紙（青二鋼）とは 日立金属で製造している高級包丁鋼ブランドのことで、白紙に[クロム、タングステン]を添加することで耐摩耗性を高めた鋼材になります。もともと鋼の種類を区別するために、色の紙を貼って目印にしていたことが由来しています。 青鋼の特徴は何といっても"切れ味"にあり、多少刃がなまったところで「ぬるっと食材に入り込んでいく」と言われ程です。俗に"甘切れ"と呼ばれたりもします。 切れ味が非常によく、耐摩耗性にも富んでいるため「出刃包丁や柳刃包丁」にいよく使用されます。
